Position Overview
We are seeking a passionate and skilled Demi Chef to join our dynamic kitchen team at Next Hotel Melbourne. You will play a key role in preparing, cooking, and presenting dishes to the highest standards, while also supporting the development of new dishes and maintaining kitchen operations. As a Demi Chef, you will be expected to lead by example, assist with training junior kitchen staff, and ensure that food hygiene and safety standards are always followed.

Core Responsibilities

  • Prepare, cook, and present dishes in your designated specialty area, ensuring quality, taste, and presentation meet hotel standards.
  • Work alongside the Executive Chef to develop and innovate new dishes and seasonal menu items.
  • Supervise and mentor Commis Chefs or Cooks, providing guidance and support on techniques, food preparation, and presentation.
  • Ensure mise-en-place is adequately prepared for service and manage food production to ensure smooth kitchen operations.
  • Maintain high standards of food hygiene, cleanliness, and safety, adhering to health and safety policies at all times.
  • Oversee stock control, monitor portion sizes, and minimize waste to maintain profit margins.
  • Collaborate with kitchen stewards to ensure the kitchen remains clean and organized.
  • Assist in training new staff members and participate in ongoing training and development opportunities.
  • Demonstrate flexibility and creativity in meeting guest requests and offering alternative dishes when necessary.
  • Take part in daily briefings and departmental meetings, offering suggestions to improve efficiency and guest satisfaction.
  • Follow all operational guidelines and assist with the maintenance of kitchen equipment.

Position Requirements

  • Proven experience as a Demi Chef or in a similar role within a fast-paced, high-quality kitchen environment.
  • Strong knowledge of food preparation techniques, safety standards, and kitchen operations.
  • Ability to work well under pressure and multitask effectively.
  • Excellent communication skills and a team-oriented mindset.
  • Passionate about culinary excellence and delivering memorable guest experiences.
  • Strong attention to detail and commitment to maintaining high standards of hygiene and cleanliness.
  • Flexibility and creativity in responding to guest requests and solving problems.
