Are you ready to bring your culinary passion and leadership to Hotel Indigo Brisbane City Centre? We’re searching for a creative, experienced Sous Chef to join our team, where you’ll work alongside our Executive Chef to drive innovation across our vibrant food and beverage outlets, including Izakaya Publico, Bar 1603, bespoke events in The Veranda private dining room, and our in-room dining.

About the Role

As Sous Chef, you will lead a talented culinary team, curating unforgettable dining experiences with creative touches that make every guest’s stay extraordinary. In this role, you will:

• Collaborate with the Executive Chef to inspire innovative, high-quality menus that reflect the Hotel Indigo brand.
• Oversee daily kitchen operations across multiple venues, ensuring consistency, quality, and attention to detail.
• Foster a harmonious relationship between front and back of house, delivering seamless dining experiences.
• Embrace a sustainable approach, championing minimal food wastage.
• Uphold impeccable hygiene and HACCP standards.
• Contribute creative ideas and off-menu alternatives, delivering exceptional culinary moments for our guests.
• Mentor, train, and provide constructive feedback to cultivate a positive, productive kitchen culture.

Key Requirements

• Proven experience as a sous chef or senior CDP in an upscale dining or hotel environment.
• Leadership skills to inspire and mentor a team, with a keen eye for detail.
• Excellent organizational and time-management skills.
• Flexibility to work a rotating schedule.
• Strong understanding of cost management and the ability to support operational forecasts and budgets.
