Position Overview:

We are seeking an exceptional Director of Restaurants & Bars to lead and oversee the operations of our Restaurants & Bars (R&B) venues. This is a key leadership role where you will be responsible for driving the financial performance and overall operations of these venues. You will mentor and guide your team, creating unforgettable experiences for our guests and fostering a culture of excellence.

Key Responsibilities:

Financial Returns

• Accountable for the financial performance of the R&B operations, achieving revenue and profitability targets.
• Monitor performance, implement strategies, and partner with stakeholders to maximize revenue.
• Prepare annual budget and set strategic goals for R&B operations.
• Control expenses, including food, beverage, and labor costs, while maximizing profit.
• Collaborate with the marketing team to create and execute promotional strategies.

Guest Experience

• Ensure all team members focus on delivering a memorable guest experience.
• Monitor and respond to guest feedback, ensuring exceptional service.
• Drive guest loyalty through exceptional service and personalized experiences.
• Ensure compliance with food safety and other regulations.

People Management

• Lead the recruitment, training, and development of the R&B team.
• Foster a high-performance culture, ensuring clear goals and team collaboration.
• Manage People & Culture issues professionally, including disciplinary actions and performance reviews.
• Promote a work environment of safety, health, and well-being.

Responsible Business

• Adhere to all WH&S policies, ensuring a safe work environment.
• Maintain high standards of security and compliance across R&B operations.
• Champion ethical standards and corporate responsibility within the team and the community.

Qualifications & Requirements:

Required Skills:

• Approachable, authentic, and solutions-focused.
• Strong communication skills, both verbal and written, with passion and clarity.
• Ability to work under pressure and meet deadlines.
• Excellent IT and systems proficiency.
• Ability to work shifts, weekends, and public holidays as required.

Experience:

• Bachelor's degree or equivalent qualification in hospitality or related field.
• Minimum 4 years of related experience, with a strong background in managing multiple venues.
• Proven experience in managing financial performance and driving business growth.
• Knowledge of the Hospitality Industry (General) Award 2020 and relevant certifications.
