As a Chef within our Culinary Brigade, you will be at the forefront of our food offering, providing our guests with exceptional, creative, locally sourced, and seasonal delights. You will help shape the success of creating exciting, innovative, and memorable hotel experiences for all guests while working with a well-rounded and highly motivated Culinary Team under the direction and leadership of an exceptional Executive Chef.

Our Izakaya Publico restaurant is a creative and inspired Japanese dining experience in Brisbane’s city centre. Our experienced chefs display customary core cooking techniques throughout the carefully curated food menu. Grilling, steaming, frying, and cold dishes inspire the substantial zensai and share plate philosophy. Locally sourced seasonal produce offers guests the opportunity to explore the unique and flavoursome foods our region has to offer. Bar 1603 is our contemporary speakeasy-inspired bar located within Izakaya and proudly offers Japanese and local beer, wine, and cocktail favourites with a sake twist. Named after the first year Izakayas were said to have begun, 1603 is a truly memorable experience unto its own, highlighted by a sense of connectedness to the neighbourhood.

Position Requirements:

  • Work alongside and take direction from the Executive Chef as well as manage and provide guidance and training to the junior chefs.
  • Assist in all aspects of food preparation and follow our ethos of minimal to zero food wastage.
  • Oversee a section of the kitchen, be it pastry, butchery, fish, sauces, vegetables, and so on.
  • Be ready to contribute with creative ideas.
  • Ability to maintain high-quality standards in a busy service.
  • Ensure a positive relationship is maintained between back of house and front of house.
  • Understand the importance of HACCP and maintain the highest hygiene standards.
  • Display a high degree of flexibility in acceding to “off the menu” guest requests, offering comparable alternatives where the guest’s original request cannot be delivered to their expectation.
  • Keep abreast of changes and developments introduced by the kitchen leadership team in the selection, production, and presentation of the menu.

You will possess:

  • The ability to curate memorable experiences for our guests through the quality of your food.
  • Experience with Japanese food styles/service is highly regarded.
  • A Cert III or IV in Commercial Cookery (or similar).
  • Professional verbal communication skills and a strong eye for detail.
  • Impeccable hygiene, grooming, and presentation.
  • Strong work ethic and flexibility to work a rotating roster over 7 days a week.
  • Superior organizational, time management, and follow-through skills.
